  • Coconut Panna Cotta with Caramelized Saba Banana a Coconut Panna Cotta with Caramelized Saba Banana and Langka (Jackfruit). 

🥥 Ingredients 🥥
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 Cup Coconut Milk
1/2 Cup Coconut Water
2 Tablespoons Agar Agar Flakes
2 Saba Bananas
4 Pieces of Frozen Langka (Jackfruit)
1 Tablespoon Coconut Oil
1 Tablespoon Coconut Sugar
1 Teaspoon Water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥥Method🥥
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a small sauce pan mix together the coconut milk and water. Add in the agar agar and bring to a rapid boil for 5 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour into glasses. 6-8oz ones work best and cool at room temperature and then leave to harden in the refrigerator for at least an hour to overnight.

To make the topping cut the saba bananas and langka into small cubes. Fry only the saba on medium heat with the coconut oil until brown and a little crispy on the edges. Add in the coconut sugar and water. Mix with the heat on until the sugar melts. Add in the langka and just mix to heat through and coat with sugar.

Leave to cool to room temperature. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

🥥To serve🥥

Take the glasses of panna cotta out of the refrigerator and top equally with the saba and langka.

⠀⠀⠀⠀⠀⠀⠀⠀⠀
You got yourself a fancy ass dessert, that is not so hard to make. Boom.

    I mean really. Is anyone really eating salad righ I mean really.  Is anyone really eating salad right now??? Here is a cookie instead. 

It's made with @aurochocolate Single-origin Filipino Cacao Dark Chocolate Couverture.  Then it's lightly dusted with some Adobo-ish finishing salt.  I.e.  Crushed bay leaves, salt and pepper corns. 

And to all the bakers out there.  Try out this baking chocolate.  There is more to life than valrhona. 😉

Ending the year with a very decadent over the top dessert.  Broken shell and all.  Yup, very 2020, everything was spot on until I moved the shell from the baking tray to the cake stand. The whole top shattered in my hands.  I still used the shell as with a Pav it all get's covered anyway with cream, curd and fruit. 

And I am showing it here because - 

1.  It's still so good, I mean really really good and 

2.  IDGAF.  May-be in the future I will retake, but let's keep it real here right now.  This is 2020.  All the good stuff is hiding something incredibly broken. 

You can use that as a metaphor for whatever you want.

Now back to the Pavlova.  It has ginger poached pear and grapes.  Like a play on the fruit cocktail from a can, but from scratch and no sugar.

Freshly whipped cream and grilled pineapples.

Of course the thing that makes it, is the calamansi curd. 

Make it and break it!  It's still good.

    Superstitions abound when we celebrate the New Yea Superstitions abound when we celebrate the New Year. We have to do the following in no particular order:

Wear polka dots. The bigger and shinier the better. It equals more coin in the new year. My dots get bigger and bigger as I age.

Make lots of noise!!! When we were living in the Philippines NYE is insane. The noise is constant all through out the night until after midnight. It's to ward away the bad vibes that have been lingering and then right when the new year starts you start it with a literal bang. My grandpa used to make these crazy spinning fireworks, that so would not be legal anywhere else.

As a kid we had to jump as high as we could off the last step once the New Year came. This is so we could grow long and tall.

One of the more important things is to eat round food. It goes back to point 1. Bringing in more coin!! We had to have 12 oranges and multiple sizes and colors of grapes and queso de bolla (really just gouda cheese).

So I have made for you these ✨Ensymada Cheese Puffs! ✨They are nice and round and puffy. The puff is laced with cheese and then smothered in some sweet cheesy butter cream. Oh and topped with more cheese.

    Help me name this NYE cocktail! It's a play on a Help me name this NYE cocktail!  It's a play on a Cosmopolitan, but with gin, shisho and calamansi instead of vodka, cranberry and lime.  What should I call it??

  1 1/2 ounces @fullcircledistillers Gin
  1 ounce Grand Marnier
  1/2 ounce Calamansi Juice
  1/2 ounce @yumeboshiplum Shisho Syrup
  Garnish: Shisho Leaf

Add the gin, grand marnier, calamansi juice and shisho syrup to a cocktail shaker with ice and shake until well-chilled.

Strain into a chilled coupe.

Garnish with a shisho leaf. 

I drank all 3 glasses and I was lit AF!! Haha.  I might still be.
