This version of Boozy Tablea Tsokolate (Filipino Hot Chocolate) has a hit of Lambanog, which is perfect for warming the soul on a cold winters day.

Tablea

So just a little bit of history of how chocolate got to the Philippines.  Through colonization of the Spanish, they brought cocoa trees to the Philippines via Mexico. The chocolate is made into Tablea, chocolate tablets.

Tablea are little disks of chocolate that is simply made from grinding fermented cocoa nibs with sugar.  It’s perfectly measured to make Tsokolate (Filipino Hot Chocolate) as all you need to do is add it to some warm water.

The chocolate is not tempered as it is simply poured into molds after being ground to a thick paste.  The white residue you see around the tablea are cocoa fat that has separated from the chocolate.  Once you melt it down, the cocoa fat blends into the chocolate again.

Boozy Tablea Tsokolate

In this version of Boozy Tablea Tsokolate I added a shot of Lambanog to the melted chocolate mixture.  The Lambanog, which is made from coconut nectar gives you this nice warm feeling when it goes down.  It’s so perfect for the cold weather we have been getting lately.

Where to get Tablea

The best place to find Tablea is from Seafood City or other grocery stores that specialize in Filipino good.  You can also order Tablea from Amazon and I have updated my store front so that is easy for you to find.

If you live in the EU you are in luck because a new company called Theo & Brom sells Belgian Tablea.  They will be selling to North America soon, so bookmark them.  The chocolate is from the Philippines, but made Belgian style.

One of my favorite local chocolate makers here in the Bay Area also sells chocolate made from Philippine cacao.  Oodaalolly, is made using Swiss chocolate techniques and you can buy them right here.

Filipino Hot Chocolate

Now you know where to get Filipino chocolate, it’s time to make Hot Chocolate!  It’s really so simple if you have tablea.  Drop two chocolate tablets in a sauce pan with a cup of water.  Heat until the chocolate is melted and then add a shot of Lambanog.  You can replace the Lambanong with any spirit that takes your fancy, but I like the little hint of coconut with my Boozy Tablea Tsokolate.

You can add a little bit of milk if you want and some coco whip as well.  Enjoy the warmth.

Ingredients

  • 2 Tablets Tablea
  • 1 Cup Water
  • 1.5 Oz Lambanog You can replace with any spirit that complements Chocoalte
  • Milk Totally Optional
  • Coconut Whip Totally Optional

Instructions

  1. Drop two chocolate tablets in a sauce pan with a cup of water. Heat until the chocolate is melted and then add a shot of Lambanog. You can replace the Lambanong with any spirit that takes your fancy, but I like the little hint of coconut with my Boozy Tablea Tsokolate.
