Mini Mango Royale Popsicle’s are made with only coco whip, fresh mangoes and graham crackers.  It’s a super easy to make cool dessert for summer.

What are Mini Mango Royale Popsicle’s?

For those not in the know Mango Royale is a Filipino ice box cake made with cream, gram crackers and super sweet and juicy mangoes.  I’ve actually made this before, but flavored with mango in a cake format.  This version is even easier.

This week in the East Bay of San Francisco where I live, it’s the best thing to make this week. We are in the midst of a heat wave!!

This recipe makes a small portion using a mini popsicle mold.  You can double or quadruple the recipe to make more or use a bigger mold.

The pretzels that I used are actually Graham Crackers.  You can order a bag from Troyer Country Market.

How to make Mini Mango Royale Popsicle’s

Now let’s make them!  I used this silicon mold that makes mini 2 inch popsicles.  They are so cute and adorable.

First cut mangoes into cubes.

Then defrost the coco whip so that it’s easier to spoon into the molds.

Finally crush the graham crackers.  If you do happen to have some of these pretzels, leave 4 of the whole.

Now that you have all the ingredients ready.  Let’s fill in our molds.  Start with the mangoes and group them all at the top.  Then just below place the pretzels in front side down.

Next scoop in the coco whip evenly between each mold.  Tap it lightly on the table to make sure it fills in the crevices.

Smooth out the top with the back of a bread knife and then place some crushed graham crackers all over. Then stick in the popsicle sticks.  I recommend freezing overnight if you can wait.  Otherwise 2 hours at the least in the fridge to make sure the coco whip is nice and stiff.

Now all you have to do is un-mold and enjoy and nice cold treat!

Mini Mango Royale Popsicles Made with Just 3 Ingredients

Ingredients

  • 1/2 of Super Ripe Mango cut into small 1 cm cubes I recommend Honey Mangoes
  • 1/4 Cup Defrosted Coco Whip
  • 1/4 Cup Crushed Graham Crackers If you have the pretzels, reserve 4 whole ones.

Recipe Notes

  • I used these Pretzel Shaped Graham Crackers.
  • I am a huge fan of So Delicious Coco Whip.
  • I recommend using Honey, Champagne or 'Alphonso' mangoes.  Make sure they are super ripe and super juicy.  You can tell by smell and the skin is super tight with no wrinkles and feels bouncy, but not hard to the touch.
