Super Easy Oven Baked Ube Pancake is made with just 4 ingredients.  You just pour it in a skillet and bake for 20 minutes.  Serve with some Ube ice cream and you have a quick dessert on the table in a flash.

Oven Baked Ube Pancake

You know that Tick Tok trend of making tiny pancakes?  Well this Oven Baked Ube Pancake is the opposite of that.  I honestly don’t have time to be putting small dots of batter on a skillet.  The best thing about this recipe is that you use a blender and pour then bake.  Now you have 20 minutes to do something else while it cooks itself.

What Ingredients do you need?

Well, this is kinda like a dutch pancake, but because of the ube, it does not puff up.  You do still get that slightly eggy texture and crispy edges with this recipe.

How do you make Oven Baked Ube Pancake?

First you heat up your oven to 425 Degrees C and while it is heating up you leave your skillet in the oven.

Then you put the eggs and the coconut milk in a blender and blend for a minute until it’s nice and frothy.  Next add in the pancake mix a tablespoon at a time until it’s all fully blended in.

Now USING AN OVEN MIT take the skillet out of the oven and pour in the melted butter.  Followed by the batter being very careful not to touch the skillet.  USING AN OVEN MIT put the skillet back in the oven and bake for 20 minutes.

What Toppings Do I Use?

I like the idea of topping it with more Ube, specifically ice cream and adding some blue berries.  You can also top it with the following:

I ordered my Ube ice cream from Wanderlust Creamery.  If you are lucky enough to be in their delivery zone, I highly recommend getting on the list.

You need to eat this warm so get it out of the oven quick with AN OVEN MIT!! Keep it on or wrap the handdle with a kitchen towel.  We do not need burns!

Scoop some ice cream on the top, garnish it with blue berries and some mint.  There you have it.  A dessert (or breakfast) in under 30 minutes.  You are so welcome.

Ingredients

  • 3 Room Temperature Eggs

  • 2/3 Cup Ube Pancake Mix
  • 4 Tablespoons Melted Vegan Butter

Garnish

  • 1/2 Cup Blueberries
  • Ube Ice Cream

Instructions

  4. Serve with a couple scoops of Ube Ice Cream and some blueberries.

Recipe Notes

You can replace the coconut milk with any milk.  The vegan butter can also be replaced with regular butter.
