
I discovered Kale and Caramel’s blog just two weeks before while insta stalking a bunch of food bloggers. I instantly fell in love with her feed and blog. It was so full of light, both in the tone of her captions and photographs. Then I read she had a cookbook coming out on the 2nd of May. I am one of those people who read about things and buy on impulse. This was one of those times. I pre-ordered her book and I kept seeing her friends post about it on stories and Instagram. I waited in anticipation.
I finally got it yesterday and I was not disappointed. The chapters of her book are broken down by herbs and it’s such a unique and fresh way present recipes. I read it cover to cover in an hour and decided right then and there I will cook through this book Julia and Julia style. Her book is filled with personal stories of love and loss with food tied into those memories. That is how I remember my food too.
The first recipe I wanted to make was her Chocolate Chia Pudding with Rose and Cardamom Coco Whip because the pudding has orange zest in it. Orange and chocolate is my number one combo ever let me tell you why. Growing up every time someone from my family came home from a trip they would always bring back those chocolate orange chocolates that is shaped like an orange and broke out into segments.

It was so part of my childhood that I had that old school flavor in my wedding cake. The coco whip with rose water and cardamom reminds me of my days in Australia. They have this candy bar called Turkish Delight. It was a mix of chocolate and rose water and was just pure yum to me. So when I read through this recipe and realized I had everything in the cupboard and fridge I set out to make it.
And this right here…memories in a cup. It’s even more meaningful as the chocolate and coco nibs I used was a present from my husband. We made our own chocolate at Dandelion Chocolate by grinding our own mixture of coco nibs. It’s the first time I used the chocolate because I was waiting to use it for something special. I am so glad I waited. The texture is so lush and it’s filled with protein, fiber and good fats. The best and healthiest chocolate pudding I have had hands down.
