Potato Salad with Mortons Salt

Herby Potato Salad

Ingredients

  • 5 lb Russet Potato pealed and cubed
  • ¾ Cup Vegan Mayonnaise
  • ¼ Cup Capers
  • 6 Hard Boiled Eggs Chopped
  • 2 Tablespoons Mustard
  • 1 Tablespoon Onion Poweder
  • 1 Tablespoon Pepper
  • ¼ Cup Chopped Parsley
  • ¼ Cup Chopped Dill
  • ¼ Cup Chopped Cilantro
  • 1 Tablespoon Morton Coarse Sea Salt

Instructions

  • Place the cubed potatoes in a steamer and steam for 20 minutes until soft.  Cool to room temperature and place in a large bowl.  Add in the rest of the ingredients and mix well.  Place in the refrigerator for at least 4 hours or overnight.  Before serving sprinkle a pinch of Morton Coarse Sea Salt on the top.
