Place 1 cup ripe langka in a blender with ½ cup water and 1 tablespoon date syrup. Bend until smooth.
Then pour it into a small sauce pan and add 1 tablespoon of chia seeds. Boil at medium to low heat until the water has evaporated and the mixture becomes nice and thick, about 10 minutes.
Leave to cool to room temperature and then transfer to a small bowl and place in the fridge until you are ready to use it.
Make the Ube Smoothie
Put all the Ube smoothie ingredients in a blender and blend until smooth. If it’s too thick for you add a bit more coconut water a tablespoon at a time.
Layer the smoothie
Start with about 2-3 tablespoons of langka jam and place it in the bottom of your glass. Then drizzle the melted cocowhip on the inside of the glass. Lastly pour in the ube smoothie.
