Pour the coconut water into a pitcher and drop in the ground coffee, mix well until you see the coconut water turn brown. Place in the fridge overnight to steep.
Grab a blender and using a strainer to catch the coffee grinds pour in 8oz of your cold brew, add in the mint leaves, hemp seeds, collagen, coconut milk and Ice. Blend until it becomes nice and smooth. Pour into a cold glass with crushed ice and top with extra mint leaves. Enjoy!
You can make about 4 cups of the latte with the cold brew mixture. If you are making all four servings all at once quadruple the quantities from the mint leaves on wards. You can also leave out the hemp seeds and collagen if you do not have those ingredients in your pantry.
