Lumpia Cups

These Lumpia Cups are the perfect appetizer to make for a big crowd. There is no wrapping required and super easy to make.

Ingredients

  • ½ Cup Prawns cut into ½ cm pieces
  • ½ Cup Sweet Potato peeled and cut into ½ cm pieces
  • ½ Cup Green Beans cut into cut into ½ cm pieces
  • ½ Cup Carrots sliced into cut into ½ cm pieces
  • 1 Tablespoon Fine Diced Shallots
  • 1 Garlic Clove crushed and minced
  • salt and pepper
  • 2 Tablespoons Olive Oil
  • 12 Sheets Egg Roll Wrapper cut into quarters
  • Coconut Oil Spray
  • mini muffin tin

Instructions

  • Make the filling following this recipe.
  • Pre-Heat oven to 300F
    To make the lumpia cups, spray the egg roll wrappers on both sides and drape them inside the mini muffin tin cups. 
    Bake for 10-15 minutes until golden brown.  Leave in the tin to cool for 5 minutes and repeat with the rest of the sheets.
  • To serve spoon the cooked filling into the cups and serve on a platter.
