Turon Baklava (Banana Lumpia Baklava)
Turon is a banana lumpia that is traditionally made by deep frying the lumpia with brown sugar. In this version we take all the ingredients and make turon a little bit easier by using the layering method of Baklava.

Banana Caramel Filling
- 3 Bananas
- ½ Cup Date or Coconut Sugar
- 1 Tablespoon Coconut Oil
Baklava
- 6 Egg Roll Wrappers
- ½ Cup Crushed Cashews
- ½ Cup Melted Vegan Butter can sub with coconut oil
Syrup
- ½ Cup Date Syrup
- 1 Teaspoon Orange Blossom Water (optional)
Make the banana filling first. Put the banana, sugar and oil in a sauce pan and cook for about 5-7 minutes until the bananas start to get caramelized. Take off the heat and cool fully before the next step.
Pre-Heat oven to 350F.
Brush both sides of each egg roll wrapper with vegan butter or coconut oil. Overlap the first two wrappers and make sure they go up the sides of the baking tray and add a third wrapper in the middle.
Spread the banana filling over the wrapper and top with some roasted cashews.
Repeating the same layering technique add the top layers of the Turon Baklava. Then using a knife cut diagonal shapes. To make the diamond shapes cut straight lines across that are one inch apart and then make diagonal cuts that are one inch apart.
Bake in the oven at 350F for 30-45 minutes. Check it at the 30 minute mark and make sure it's all evenly browned and crisp. Just tap the layers with your fingers to get a feel and put it back in the oven if its still on the softer side.Once it is done take it out of the oven and right away pour over the syrup. Again you should hear it sizzle while it's being absorbed by the butter wrappers.
