Tropical Fruit Ice Made with Whole Fruit

This Tropical Fruit Ice Recipe is made with tropical whole fruit with a touch of citrus. It’s basically a vacation in a glass.

Ingredients

  • 3 Cups Cut Watermelon
  • 2 Cups Cut Cantaloupe
  • 1 Teaspoon Grated Fresh Ginger
  • 1 Teaspoon Greated Lemongrass
  • 2 Cups Cut Papaya
  • Juice of One Lime
  • Rind of One Lime
  • 1 Cup Coconut Milk Note you will use ½ cup in two fruit layers

Equipment

  • Blender
  • Loaf Tin that you can place in the freezer

Instructions

Papaya with Lime and Coconut Milk

  • Place the papaya, ½ cup of coconut milk, lime juice and rind in a blender and blend until smooth.  Pour into the bottom of the loaf tin and freezer for about an hour.  Note, don't move to the next step until this layer is frozen.

Cantaloupe with Ginger, Lemongrass and Coconut Milk

  • Place the cantaloupe, the rest of the ½ cup of coconut milk, ginger and lemongrass into the blender.  Blend until smooth.  Pour over the frozen papaya layer.  Note, don't move to the next step until this layer is frozen.

Watermelon

  • Blend watermelon just on it's own until smooth.  Pour over the frozen cantaloupe layer.  Freeze overnight until very firm.

To Serve

  • Use a fork to scrape the Tropical Fruit Ice and serve into cups.
