Avocado Shake Halo Halo

Avocado Shake Halo Halo combines two classic Filipino cold snacks. The avocado shake, which is frozen to make a granita. Served on top of fresh mango keeps the flavors classic, just served in a different way.

Equipment

  • Blender or Shave Ice Maker

Ingredients

  • 1 Large Avocado
  • 1 Cup Coconut Milk
  • ¼ Cup Date Syrup
  • 2 Large Mangoes Diced
  • ½ Cup Vegan Coconut Ice Cream
  • 1 Teaspoon Pandan Powder

Instructions

  • Blend the avocado, coconut milk and date syrup. Then pour in a shallow container and freeze overnight. Once frozen take a fork and grate the avocado shake.
    Alternatively you can pour the mixture into shave ice molds and once frozen use the shave ice maker to grate the frozen avocado shake.
  • Distribute the diced mango between 2 glasses, top with the avocado granita, add some coconut ice cream on the top and dust with pandan powder.
