Cauliflower Garlic Rice
- 16 Oz Bag Riced Cauliflower
- 2 Tablespoons Olive Oil
- 2 Tablespoons Garlic Powder
- Salt and Pepper
Longganisa Crumbles
- 1 Pound Ground Pork
- 2 Tablespoons Olive Oil
- 6 Cloves Garlic Minced
- ¼ Cup Coconut Aminos
- 1 Tablespoon Coconut Vinegar
- ½ Cup Just Date Syrup
- 1 Tablespoon Paprika
- 1 Tablespoon Black Pepper
- 2 Tablespoons Garlic Powder
Wilted Greens
- 4 Cups Spinach
- 1 Tablespoon Olive Oil
- Sat and Pepper
Fried Egg
- 4 Eggs
- 1 Tablespoon Olive Oil
Side Dishes
- 2 Tomatoes cut into wedges
- ¼ Cup Chopped Chives
Longganisa Crumbles
While the cauliflower is in the oven make the logganisa crumbles. In a large pot heat up the olive oil on medium heat and add the pork. Cook for 5 minutes and then add in the garlic. Cook for a further 10 minutes until nice and brown.
Add in the coconut aminos, vinegar, date syrup, and other seasonings. Cook for another 5 minutes to develop flavor. Taste and adjust the sweet, salty or sour levels to your liking. Leave in the pot until ready to serve.
Fried Egg
Check on the cauliflower and turn off oven and leave to the side until ready for serving.
To make the friend egg heat up the oil in a small skillet on medium heat. Crack an egg into the hot oil and cook for 3-4 minutes just until the egg white is set. Transfer to a plate and repeat for the other 3 eggs.
To Serve
Place rice, longganisa crumbles, greens, eggs and tomato and chives on the table and serve family style.
Note:
My friend Ginger Dimpasok from Cafe 86 has made a version of this with apple sauce. If you don't have Date Syrup you can replace it with ½ cup of apple sauce instead.
You can also replace the Coconut Vinegar with regular white vinegar or even apple cider vinegar.
