Ingredients

  • 1 Vegan Pie Dough Crust
  • ¼ Cup Vegan Cream Cheese
  • ½ Cup Fresh or Thawed Langka (Jackfruit) Chopped
  • 6 Saba Bananas Sliced
  • 1 Cup Coconut Sugar
  • 2 Tablespoons Date Syrup (Divided)
  • 1 Tablespoon Vegan Butter
  • 1 Tablespoon Turbinado Sugar

Instructions

  • Make Vegan Pie Dough following this recipe.  Let rest in the refrigerator for 1 hour.
  • Preheat oven to 350C
  • Place the dough in between two pieces of parchment paper.  Roll out the dough into a rough circle and about a ½ a cm thick.  Take off the top parchment and leave the rolled out dough on the bottom parchment and place both on a baking tray.
  • Spread out the vegan cream cheese leaving a ½ inch border.  Top with the langka (jackfruit) pieces and drizzle with 1 tablespoon of date syrup.
  • Roll the sliced saba bananas in coconut sugar and arrange over the langka.
  • Using your hands and fingers lift up the edges over the langka and saba.  Pinch any dough that has broken.
  • Brush the edges you flipped over with date syrup and then sprinkle with the sugar.  Dot the vegan butter over the bananas.
  • Bake for 30-35 minutes until the crust is nice and golden brown and the filling is bubbling.
  • Leave to cool for 5 minutes and serve hot topped with coconut ice cream.
