Langka and Saba - Jackfruit and Banana Galette
Traditional Filipino flavors of Langka (Jackfruit) and Saba (Banana) melt together in a vegan flaky crust re-imagined as a Jackfruit and Banana Galette.

- 1 Vegan Pie Dough Crust
- ¼ Cup Vegan Cream Cheese
- ½ Cup Fresh or Thawed Langka (Jackfruit) Chopped
- 6 Saba Bananas Sliced
- 1 Cup Coconut Sugar
- 2 Tablespoons Date Syrup (Divided)
- 1 Tablespoon Vegan Butter
- 1 Tablespoon Turbinado Sugar
Make Vegan Pie Dough following this recipe. Let rest in the refrigerator for 1 hour.
Preheat oven to 350C
Place the dough in between two pieces of parchment paper. Roll out the dough into a rough circle and about a ½ a cm thick. Take off the top parchment and leave the rolled out dough on the bottom parchment and place both on a baking tray.
Spread out the vegan cream cheese leaving a ½ inch border. Top with the langka (jackfruit) pieces and drizzle with 1 tablespoon of date syrup.
Roll the sliced saba bananas in coconut sugar and arrange over the langka.
Using your hands and fingers lift up the edges over the langka and saba. Pinch any dough that has broken.
Brush the edges you flipped over with date syrup and then sprinkle with the sugar. Dot the vegan butter over the bananas.
Bake for 30-35 minutes until the crust is nice and golden brown and the filling is bubbling.
Leave to cool for 5 minutes and serve hot topped with coconut ice cream.
