Ginisang Kamatis at Itlog (Sauteed Tomatoes with Egg)

Ginisang Kamatis at Itlog (sauteed tomatoes with egg) is a super simple two ingredient meal that gives you a healthy and hearty meal on the dinner table in no time.

Ingredients

  • 5 Tomatoes Chopped
  • 2 Eggs Scrambled
  • 1 Teaspoon Salt
  • 1 Tablespoon Olive Oil

Instructions

  • Start buy rough chopping the tomatoes into chunks and place it in a pan with the olive oil.  Season it with some salt and put on medium heat.
  • After about 5 minutes the tomatoes will start to breakdown and become a little bit saucy.  Turn down the heat to low and cover for 5 minutes to further sweat out the tomatoes to release the juices.
  • Once the tomatoes have broken down add in the 2 eggs that have been scrambled.
  • Stir in the eggs until cooked and fully incorporated into the tomatoes.  You will see that the eggs start breaking down and it becomes more of a tomato scramble than an egg scramble.
  • Transfer the Ginisang Kamatis at Itlog on a plate and have with rice or even crackers.  I finished with a little truffle oil, but that is totally optional.
