- 5 Tomatoes Chopped
- 2 Eggs Scrambled
- 1 Teaspoon Salt
- 1 Tablespoon Olive Oil
Start buy rough chopping the tomatoes into chunks and place it in a pan with the olive oil. Season it with some salt and put on medium heat.
After about 5 minutes the tomatoes will start to breakdown and become a little bit saucy. Turn down the heat to low and cover for 5 minutes to further sweat out the tomatoes to release the juices.
Once the tomatoes have broken down add in the 2 eggs that have been scrambled.
Stir in the eggs until cooked and fully incorporated into the tomatoes. You will see that the eggs start breaking down and it becomes more of a tomato scramble than an egg scramble.
Transfer the Ginisang Kamatis at Itlog on a plate and have with rice or even crackers. I finished with a little truffle oil, but that is totally optional.
