Otap with Luya (Ginger) – Bahay Kubo Cooking Series

This easy Otap recipe is made with store bought puff pastry cutting the labour in half.  It’s also flavored with Luya or Ginger as part of our Bahay Kubo Cooking Series.

Ingredients

  • 1 Packet Frozen Puff Pastry Or Make Your Own Using This Recipe
  • 1 Cup Super Fine Sugar
  • 2 Tablespoons Ginger Powder
  • ½ Cup Melted Coconut Oil

Instructions

  • First prep the sugar and luya mixture by mixing it together until there are no lumps. Leave it to the side while you make the shapes.
  • Pre-heat oven to 400F.
  • Using a silpat or a surface dusted lightly with flour start out by rolling out the puff pastry dough as thin as you can with a rolling pin. Aim for half a centimeter.
  • Once the dough has been thined out start at one of the long ends of the pastry and lift up the edges with your finger tips lightly. Then start to roll the dough into a log keeping the pastry pretty tight. This gives the Otap it's signature oval rings.
  • Roll the log to seal the edges. Using a sharp knife cut small disks off the log about 1 cm thick.
  • Taking one disk at a time. Lay it facing up with the rings of dough facing towards you.
  • Lightly dust your surface and rolling pin with flour so that it won't stick. Using the rolling pin make an oval shape with your puff pastry, again rolling out as thin as possible without ripping.
  • Brush both sides of the rolled out pastry and then dip both sides in sugar. Repeat for the rest of the dough.
  • Place on a lined baking sheet and bake for 10-12 minutes until golden brown and the sugar is all melted.
  • Take out of the oven and leave to cool for 5 minutes. Transfer to a wire rack to fully cool down.
  • Eat right away with some Salabat for merienda or with ice cream for a decadent dessert.
  • Store in an airtight container for up to a week on the counter top away from direct sunlight.
