Palabok Deviled Eggs

Inspired by the Filipino Noodle dish Palabok. These Palabok Deviled Egg’s come together in under 30 minutes. All you need are 6 eggs, mayo and seasonings that are already in your pantry. Add some smoked fish on the top and this fancy app is good to go.

Ingredients

Filling

  • 6 Hard boiled Eggs Cut in Half take out the yolks and put in bowl and mash. Put the egg whites halves on a plate/platter
  • ¼ Cup Mayo
  • 1 Teaspoon Patis Fish Sauce
  • 1 Teaspoon Calamansi Juice
  • 1 Teaspoon Atchuete Powder
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder
  • ½ Teaspoon Black Pepper

Garnishes

  • 1 Tablespoon Tinapa Flakes or Smoked Fish
  • 1 Tablespoon Crushed Chicharon
  • 1 Tablespoon Chopped Chives
  • 1 Tablespoon Salmon Roe

Instructions

  • In a small bowl mix together the egg yolks, mayo and the seasonings. Mash with a fork to take out any lumps and make everything smooth. Use a zip lock bag to pipe it back into the egg whites by cutting one end off.
    Top with all the garnishes.
    Really that is it. I know when you look at Deviled Eggs it looks so complicated. It’s really just mashing up the egg yolks with some mayo and seasonings and putting it back in the egg hole.
