Broken Glass Recipe with Lychee, Yakult and Strawberry

Strawberry Jelly
- 1 6 oz Box Strawberry Jelly
- 1 Cup Hot Water
- 2 Cups Cold Water
Lychee Yakult Layer
- 3 Cans Lychee Sparkling Water I used Sanzo
- ½ Cup Sugar
- 3 Bottles Yakult
- 1 1 oz box Unflavored Gelatin I used Knox brand
Make the Strawberry Cubes: Boil 1 cup of water and take off the heat and add in the strawberry gelatin powder and mix well. Add 2 cups of cold water and mix well again. Line a small baking pan with plastic wrap and pour in the strawberry gelatin mixture. Refrigerate for 4 hours until very firm.
Make the Lychee and Yakult Layer: (don't start until strawberry jelly is firm) After 4 hours or the next day make the lychee yakult jelly. In a large bowl mix together 2 cans of lychee sparkling water and 3 bottles of yakult. Sprinkle in 4 packets of unflavored gelatin. Mix well and leave the gelatin to absorb the liquid. Take the 3rd can of lychee sparkling water and put in a small sauce pan with ½ cup of sugar. Bring up to a boil. Pour the boiled lychee sparkling water into the lychee and yakult mixture. Mix well. Leave to cool.
Mold: Take the strawberry jelly out and cut into small squares. Place them inside a jelly mold that is sitting on top of a baking sheet. This makes it easier to move to the refrigerator. Pour the cooled lychee and yakult mixture over the strawberry jelly. Put the filled mold into the refrigerator overnight. Un-molding: Take the Broken Glass Jello out of the refrigerator. Find a bowl that is bigger than your mold and fill it with warm water. Do not use boiling water. Dip the jello mold into the warm water for about 5 to 10 seconds until you see it pulling away from the mold. Jiggle it slightly to make sure it does pull away. Invert a plate on top of the mould. Hold firmly together and flip over right side up. Jiggle the mold up to release the Broken Glass Jello on to your serving plate.
