Ginataang Mashed Potato with Crispy Dilis

  • Sauce Pan

Ingredients

  • 1 Pound Russet Potatoes (peeled and cubed)
  • 1 14 oz Can Coconut Milk
  • 1 Tablespoon Grated Ginger
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Fish Sauce

Toppings

  • 2 Tablespoons Crushed Dilis
  • 1 Tablespoon Chopped Chives

Instructions

  • Boil the potatoes: Place the cubed potatoes, ginger, garlic and coconut milk in a sauce pan. Turn up the heat to medium low and leave to simmer for 20 minutes until the potatoes are super soft. Stir on occasion so that it doesn’t burn on the bottom.
  • Season the potatoes: Add the fish sauce to the soft potatoes.
  • Mash the potatoes: Mash it until it's nice and smooth
  • Serve the potatoes: transfer to a serving dish and top with crushed dilis and chopped chives
