Knickerbocker From Zamboanga Recipe
This Knickerbocker from Zamboanga is made with a variety of fresh fruit and strawberry jello. Then vanilla flavored cream is poured in and topped with a scoop of strawberry sorbet. It's one cousin removed from Halo Halo.

- 1 Cup Fresh Heavy Cream
- 1 Teaspoon Vanilla Paste or Essence
- 4 Cups Fresh Fruit - use a variety (Pineapple, papaya, melon, watermelon, strawberries, blueberries, grapes) whatever is fresh and in season. Make sure all the fruit are cut in the same size.
- 1 Cup Strawberry Jello Cubed
- 1 Pint Strawberry Sorbet or Ice Cream
Pour 1 cup of cream into a small bowl. Add in vanilla paste. Lightly whip for about 5 minutes until the cream gets slightly thick. Transfer to a serving cup with a spout. Keep in the refrigerator until needed.
Layer the fruit into each of the 4 glasses. Finish with a layer of strawberry jello.
Pour in the cream going all the way to the strawberry jello and top with a scoop of strawberry sorbet or ice cream.
Eat right away.
