Mini Mango Royale Popsicles Made with Just 3 Ingredients

Mini Mango Royale Popsicle's are made with only coco whip, fresh mangoes and graham crackers.  It's a super easy to make cool dessert for summer.

Ingredients

  • ½ of Super Ripe Mango cut into small 1 cm cubes I recommend Honey Mangoes
  • ¼ Cup Defrosted Coco Whip
  • ¼ Cup Crushed Graham Crackers If you have the pretzels, reserve 4 whole ones.

Instructions

  • Fill the molds starting with the mangoes and group them all at the top.  Then just below place the pretzels in front side down.

  • Next scoop in the coco whip evenly between each mold.  Tap it lightly on the table to make sure it fills in the crevices.

  • Smooth out the top with the back of a bread knife and then place some crushed graham crackers all over. Then stick in the popsicle sticks.  I recommend freezing overnight if you can wait.  Otherwise 2 hours at the least in the fridge to make sure the coco whip is nice and stiff.

Notes

  • I used these Pretzel Shaped Graham Crackers.
  • I am a huge fan of So Delicious Coco Whip.
  • I recommend using Honey, Champagne or 'Alphonso' mangoes.  Make sure they are super ripe and super juicy.  You can tell by smell and the skin is super tight with no wrinkles and feels bouncy, but not hard to the touch.
