Place the chestnut cream and mascarpone in a large bowl and mix until it's fully incorporated.
Transfer the chestnut topping into a pipping bag and set aside.
Lay out all 8 glasses on a table and fill the bottom with one cookie.
Dot the cookie with the red wine caramel or jam and place one candied chestnut on top.
Top the chestnut with a couple spoons of coco whip and then pipe the chestnut topping on top.
Garnish with another candied chestnut and some gold flakes
Repeat all the steps for each glass.
