Pre-heat oven to 350F and line your 8x8 pan with foil and spray with baking spray.
Place the ½ cup of butter, 1 tablespoon of coconut oil and ½ cup of Ube Cookie butter in your sauce pan. Turn on the stove to medium/low heat. Stir until everything has melted and turn off the heat.
Add the 1 jar of Ube Halaya with Macapuno into the sauce pan along with the 1 cup of sugar and ½ teaspoon of salt. Mix well until you get a smooth batter.
Add the eggs into the batter one at a time mixing well in between each addition.
Fold in half of the ¾ cup of flour into the batter and fold in slowly until there are no more flecks of flour. Add in the rest of the flour and fold in slowly until there are no more flecks of flour.
Bake for 30-35 minutes until the sides start to pull away but the middle is still slightly under baked.
Rest and cool for 24 hours.
Cut into squares.
Notes
If you can't find Ube Halaya with Macapuno, just buy or add in just Ube Halaya and add in ⅓ Cup of Macapuno.
