    Ube Brownies with Macapuno

    Ube Brownies made with both Ube Cookie Butter and Ube Halaya with Macapuno strings. So fudgey with super Ube flavor.

    Ube Brownies with macapuno

    I've been wanting to make Ube Brownies for so long, but didn't want to use white chocolate in it, as I find them to be too overpowering and sweet.

    The combination of using both Ube Cookie Butter and Ube Halaya is key to making them super fudgey.

    Adding Macapuno strings make these super Filipino. Don't be afraid to use our ingredients in everything!

    Ingredients for Ube Brownies

    You will need these ingredients to make them.

    Bowl of flour, jar of coconut oil, jar of ube halaya, jar of cube cookie butter, 3 eggs in a bowl, stick of butter, salt and sugar in a bowl.

    Butter - You can use either salted or unsalted butter. If you use salted you do not need to add the additional salt.

    Coconut Oil - Ube and coconut go so well together and this adds more good fat to the Ube Brownies.

    Ube Cookie Butter - I like using this as a replacement to just plain Ube flavoring. It just amps it up more. You can make it using my Ube Cookie Butter recipe or buy it from Ninongs Dessert Lab.

    Ube Halaya - The key is to find the jar of Ube Halaya with Macapuno strings. The macapuno is a game changer as it adds little bits of chew and keeps the brownies moist. Look for it at your local Filipino grocery store.

    Sugar - I know lots of sugar in this recipe, but it does add to the tenderness of the brownies.

    Salt - If you used salted butter you can omit. If you used unsalted add a pinch of salt for balance.

    Eggs - For the good protein!

    Flour - Use all purpose flour with no rising agents.

    Let's Make It!

    All you are going to need is a sauce pan that can hold 4 quarts and a 8x8 pan lined with foil and sprayed with baking spray.

    The Ube Brownies start like a standard Brownie recipe by melting the butter, coconut oil and Ube cookie butter. Once everything has melted add in the sugar, salt and Ube Halaya.

    Mix well until you get a smooth mixture. Then add in the eggs one at a time mixing well in between each egg.

    Once all the eggs are in fold in the flour in 2 batches until you get a nice smooth batter.

    Pour the batter into your lined 8x8 pan.

    Bake for 30-35 minutes until you see the edges of the Ube Brownies start to come away from the edge. The middle will be still slightly under baked (these will be the more fudgey slices).

    Cooling and Slicing the Ube Brownies

    It is advisable to leave the brownies to cool overnight to set. You just need to leave it on the counter (with a note to say do not eat!). Just leave it uncovered.

    The next day you can trim the edges off if you like perfect squares and cut them to any size you like. Baking in a 8x8 pan makes 9 perfect squares. You can make them smaller if you wish.

    The edge pieces are more cakey and the ones in the middle are more fudgey.

    Storage

    You can leave the Ube Brownies in a covered cake dome for up to 3 days. If you have any left over longer then that wrap each cut brownie square in plastic wrap and store in the freezer for up to 3 months.

    Leave them on the counter to get to room temperature before eating.

    FAQ About Ube Brownies

    I can't find Ube Cookie Butter

    If you can't find it, you can make it using this Ube Cookie Butter Recipe.

    Can I use Ube Condensed Milk instead of Ube Cookie Butter?

    Yes you can! You don't need as much as Ube Condensed milk is so potent. Just use ¼ cup of it.

    I can't find Ube Halaya with Macapuno what do I do?

    You can buy a separate jar of just Ube Halaya and a separate jar of just Macapuno. In the recipe you will be using the whole jar of Ube Halaya. You can add in ⅓ cup of Macapuno.

    Equipment

    • 4 Quart Sauce Pan
    • 8x8 baking pan
    • Foil
    • Baking Spray

    Ingredients

    • ½ Cup Butter
    • 1 Tablespoon Coconut Oil
    • ½ Cup Ube Cookie Butter
    • 1 Jar Ube Halaya with Macapuno (12oz/340g)
    • 1 Cup Sugar
    • ½ Teaspoon Salt
    • 3 Eggs at Room Temperature
    • ¾ Cup All Purpose Flour

    Instructions

    • Pre-heat oven to 350F and line your 8x8 pan with foil and spray with baking spray.
    • Place the ½ cup of butter, 1 tablespoon of coconut oil and ½ cup of Ube Cookie butter in your sauce pan. Turn on the stove to medium/low heat. Stir until everything has melted and turn off the heat.
    • Add the 1 jar of Ube Halaya with Macapuno into the sauce pan along with the 1 cup of sugar and ½ teaspoon of salt. Mix well until you get a smooth batter.
    • Add the eggs into the batter one at a time mixing well in between each addition.
    • Fold in half of the ¾ cup of flour into the batter and fold in slowly until there are no more flecks of flour. Add in the rest of the flour and fold in slowly until there are no more flecks of flour.
    • Bake for 30-35 minutes until the sides start to pull away but the middle is still slightly under baked.
    • Rest and cool for 24 hours.
    • Cut into squares.

    Notes

    If you can't find Ube Halaya with Macapuno, just buy or add in just Ube Halaya and add in ⅓ Cup of Macapuno.
