Ube Cheesecake Balls
These Ube Cheesecake Balls are made with just 2 ingredients. Leftover Ube Cheesecake and some crushed Ube Otap.

- Ube Cheesecake (Use what you have leftover or buy a 6 inch cake)
- 18 Ube Otap Cookies
Place your Ube Otap in a food processor and blend until it looks like sand. You can also place the otap in a 1 gallon ziplock bag and use a rolling pin to crush it up. Transfer to a large bowl.

You can use the same blender without washing it out, just make sure most of the Otap flakes have been removed. A few is okay. Place the leftover cheesecake in the blender and blend until smooth. You can also mash it up with a wooden spoon or with very very clean hands.
Ube Cheesecake (Use what you have leftover or buy a 6 inch cake)
Use a 1 tablespoon size ice cream scooper to make balls. You can also use a tablespoon to portion it out.
Roll into balls and place into the crushed otap. Use the tips of your fingers to coat and roll them around.
It should be fully coated all around. Keep repeating this process until you have coated all your Ube Cheesecake Balls. Place them on a lined baking sheet.
Once you have coated them all, place in the refrigerator for at least an hour to cool and harden.Serve when needed.
If you have plenty of otap flakes left over, put them in a sandwich bag and place in the freezer. You can use it as a crunch ice cream topper or make more balls.
You can use a different kind of coating as well if you don't have Ube Otap. Polvoron, Oreo crumbs or even fruity pebbles work well.
