These Ube Cheesecake Balls are made with just 2 ingredients. Leftover Ube Cheesecake and some crushed Ube Otap. That is all it takes for people to think you are over the top but not really.
Okay. Confession time. This recipe was originally going to be for a small serving of Ube Cheesecake. However I baked it in the wrong type of pan. It was too shallow and small and it just didn't look good. The cake was still really good though and I didn't want to waste a good photo shoot.
So I mashed up a perfectly good cake and shaped them into balls. The magic happens when you roll it in finely crushed Ube Otap flakes. So simple and easy, yet stunning at the same time.
Ingredients
Yes you will just need two ingredients!
Ube Cheesecake - If you are ever wondering how to use up leftover Ube Cheese cake, this is the best recipe to make from it. This recipe also gives you more fridge and freezer space by making tiny little balls from it.
Ube Otap - You will need about 18 Ube flavored Otap cookies. You won't use all of it, but it's better to have more than less when you are using it as coating.
You can use a different kind of coating as well if you don't have Ube Otap. Polvoron, Oreo crumbs or even fruity pebbles work well.
How To Make Ube Cheesecake Balls
Really it's so easy.
Place your Ube Otap in a food processor and blend until it looks like sand.
You can also place the otap in a 1 gallon ziplock bag and use a rolling pin to crush it up. Transfer to a large bowl.
You can use the same blender without washing it out, just make sure most of the Otap flakes have been removed. A few is okay. Place the leftover cheesecake in the blender and blend until smooth.
You can also mash it up with a wooden spoon or with very very clean hands.
Use a 1 tablespoon size ice cream scooper to make balls. You can also use a tablespoon to portion it out.
Roll into balls and place into the crushed otap. Use the tips of your fingers to coat and roll them around.
It should be fully coated all around. Keep repeating this process until you have coated all your Ube Cheesecake Balls. Place them on a lined baking sheet.
If you have plenty of otap flakes left over, put them in a sandwich bag and place in the freezer. You can use it as a crunch ice cream topper or make more balls.
Once you have coated them all, place in the refrigerator for at least an hour to cool and harden.
How To Serve Ube Cheesecake Balls
These are great for Filipino New Year Noche Buena celebrations as it's round and has ube in it!
To serve place on a platter and serve very cold.
You can also make these ahead of time. Let's say several people brought Ube Cheesecake for Christmas, you can make it the day after Christmas and store it in a gallon zip lock bag until your New Year's festivities.
These Ube Cheesecake Balls are also a good addition to dessert or cookie boxes.
