How To Put Together a Filipino Inspired Taco Bar

This Filipino Inspired Taco Bar is filled with handmade Ube Tortillas, Longanisa crubles, quick pickled shallots and super fresh tomatoes, cilantro and green onions.

Ingredients

  • 1 Shallot Sliced Thin
  • ½ Cup Vinegar
  • 1 Teaspoon Salt
  • 16 Ube Tortillas
  • 1 Pound Cooked Longganisa Crumbles
  • ½ Cup Longganisa Sauce
  • ½ Cup Chopped Cilantro
  • ½ Cup Chopped Tomato
  • ¼ Cup Sliced Green Onion
  • 8 Calamansi or Lime Wedges

Instructions

  • Place the sliced shallots in a small jar and cover with vinegar.  Add salt and stir.  Leave to sit for up to an hour.
  • Make the Ube Tortillas using this recipe.
  • Make the Longganisa Crumbles using this recipe.
  • Make the Longganisa Sauce using this recipe.
  • Place all the component in bowl and serve on a large cutting board or just on the middle of the table.  Serve with a jar of Margarita.

If you can't find shallots use half a red onion and slice thin.  You may need to use more vinegar to cover the sliced onions.  You just need to make sure it's covered to get a quick pickle.
