    Quick and Easy Mint and Melon Beauty Pops

    Vital Proteins was kind enough to send me their new Mint and Melon Beauty Water and I thought... why not make it into a popsicle.  It's also nearing the end of summer and the melons have appeared at my farmers market. After all this heat we have had they are all sweet and juicy.

    One of my favorite snacks growing up was this Melon Ice Cream ball.  It's so good!  My recipe is not a replication, but inspired by this ice cream I devoured in my teens.

    Mint and Melon Beauty Pops

    Ingredients

    • Half a Honeydew Melon
    • 4 scoops Melon and Mint Beauty Water
    • 8 0 z Coconut Water
    • Big handful of mint

    Instructions

    • Throw everything in a blender and blend until all is incorporated and smooth (about 2 minutes) pour into your Popsicle mold and freeze for at least 2-4 hours. Enjoy! I used mini popcicle molds and made 16 mini pops.
