    Almond Jelly with Tofu

    Almond Jelly with Tofu is a healthy spin on the Almond Jelly I used to have as a kid. Adding soft silky tofu adds protein to the dessert and no one will ever know. Served with a drizzle of date syrup and fresh fruit, it's the perfect ending to a meal.

    What is Almond Jelly?

    Almond Jelly or Almond Tofu originated from China. Traditionally made with soaked apricot kernels, agar agar and sugar. Nowadays it is available to make from a packet. Containing ingredients such as sugar, agar agar and almond extract. I myself have never tried it made with apricot kernels. I'm sure is is so so good.

    What I grew up eating is the one from the packet mixed with a can of lychee. It's so good when it's been chilled. My mom would always make this easy dessert for potlucks.

    Almond Jelly with Tofu

    In my version of the dessert I add tofu. It has to be the super soft and silky kind so that the texture of the dessert does not change. I also add in a drizzle of date syrup on top along with sliced fresh fruit. It gives the Almond Jelly with Tofu dessert a bit more nutrition (but in secret). Shhh.

    Ingredients

    This is what you will need to make it:

    • 1 Packet Almond Flavor Agar Agar Dessert. I used a brand called Golden Coins. You can get it at any Asian Grocery Store or order it online.
    • 1 Box Super Soft and Silky Tofu
    • 1 Can Coconut Condensed Milk
    • Drizzle of Date Syrup
    • Variety of Sliced Fruit.

    How to Make it

    The method is super easy. All you need to do is mix the packet of the Almond Flavor Agar Agar dessert with 4 cups of water and heat it up until it comes to a boil. Remove from heat.

    In a blender add in the tofu and condensed milk. Add in the heated up mixture. *Be careful it's hot!*. If you have a blender with a removable pour cap take that out. And cover the hole with a double layer of paper towels folded and on top of that a pot holder. Before blending use your hands to hold down the layer of paper towels and pot holder. This is to make sure hot liquid does not spew all over you and your kitchen.

    If you have an immersion blender that would be better as you can just add the tofu and condensed milk to the pot and blend until smooth.

    After blending set a strainer over another big bowl or pot and strain the mixture through.

    Once you have strained it pour the mixture into 12 individual cups. Leave on your countertop to get to room temperature. Once it is at room temperature after an hour it should be set. Transfer to the refrigerator to cool for at least 4 hours.

    How to Serve Almond Jelly with Tofu

    To serve take out the cups of set Almond Jelly with Tofu and drizzle each cup with 1 tablespoon of date syrup. Garnish with your choice of sliced fruit.

    Equipment

    • Large Sauce Pan
    • Stand or Immersion Blender

    Ingredients

    • 1 7 oz Packet Almond Flavor Agar Agar Dessert
    • 1 12 oz Box Super Soft and Silky Tofu
    • 1 11.25 oz Can Coconut Condensed Milk

    Garnishes

    • 1 Cup Date Syrup
    • 2 Cups Sliced and Cut Fruit (any variety)

    Instructions

    Make the Jelly

    • In the large sauce pan mix the packet of the Almond Flavor Agar Agar dessert with 4 cups of water and heat it up until it comes to a boil. Remove from the heat and cool for 5 minutes.
