    Cassava Bibingka with Cheese Recipe

    Jump to Recipe Print Recipe

Cassava Bibingka with Cheese made with just 5 wholesome ingredients and ready in 30 minutes.

    Cassava Bibingka with Cheese

I made this the other day for my Dad so he would have a sweet snack to have after a meal.  I actually forgot to add some butter, but the coconut milk makes it super moist.

What is the deal with the cheese you might ask?  It's used as a salty counter point to the sweetness of the batter.

Here is the recipe for Cassava Bibingka with Cheese

    16 oz Grated Cassava
1 Can Full Fat Coconut Milk
    3 Eggs
    ½ Cup Date Syrup
    ½ Cup Shredded Cheese

Pre-heat oven to 350 degrees and spray two 8 inch cake tins with coconut oil.

Mix everything in a bowl except for the shredded cheese. Pour into the cake tins and then sprinkle the cheese on top.

Bake for 25-30 minutes. Cool fully in the tin.  Cut into equal pieces.  Done and done.
