Anyone obsessed with boba tea? I was. When I was living in Singapore I would have a boba tea everyday. I would stop by the tea place at the train station and get one before I headed into the office. Back then I didn’t really think about what I was putting in my body. I just ate and drank what I liked and enjoyed it. I never new how much it was filled with empty calories and sugar.
Now if I have friends wanting to go to a boba tea place (there is 4 alone in my neighborhood that just opened in the last 3 months) I just order a normal ice tea unsweetened with no boba. I know you are thinking she is just drinking regular tea then. Yup, but at least I get to spend time with friends and they get to enjoy the drinks they want to have.

I do miss the milky tea, so I created three nutrient dense Cashew Milk’s with Chia seeds. The chia seeds act as a replacement to the boba, which is just full of empty carbohydrates. Chia seeds are high in fiber, omega 3 fats and protein.

Strawberry Cashew Milk with Chia Seeds
- 1/4 Cup Raw Cashews the raw cashews help make this creamy
- 8 oz Cashew Milk any nut milk will do
- 1 Tablespoon Dried Strawberries
- 1 Teaspoon Maple Syrup add more or less to taste
- 1/4 Teaspoon Vanilla
- Pinch of Pink Himylayan Sea Salt
- 1 Teaspoon Chia Seeds
- Crushed Ice Optional
Blend all ingredients in a blender for 2 minutes. Place chia seeds in bottom of a glass and pour strawberry milk over. Place in the refrigerator for at least 2 hours (ideally over night) to soften the chia seeds to have the same mouth feel as boba pearls.
If you wish to drink it now add crushed ice AFTER the initial two minute blend. The chia seeds will be tiny and hard , but if you have some plain chia pudding on hand in the fridge you can place one tablespoon in the glass and mix to incorporate.

- 1 Teaspoon Maple Syrup add more or less to taste
- 1/4 Teaspoon Vanilla

- 4-5 leaves of fresh Mint
- 1 Teaspoon Maple Syrup add more or less to taste
- 1/4 Teaspoon Vanilla
- Pinch of Pink Himylayan Sea Salt
- 1 Teaspoon Chia Seeds
- Crushed Ice Optional
