I admit I’ve been buying and roasting figs this summer because they are photogenic. My husband keeps stating that fact because when we first met I declared that I hated figs. The first time I had them raw they were super slimy and not sweet. I just didn’t have the right one.
I still can’t eat them raw and a few weeks ago I went on a quest to find a recipe with roasted figs and goat cheese. I didn’t have to go far as this recipe from Snixy Kitchen was the first one to pop up in my Pinterest search.
The tart is supposed to have ginger in it, but I totally forgot it. I’m sure it would of been even better with that added kick, but even without it, it was super decadent and creamy and earthy.
