    The Healthiest Cookie Butter Ever

Why I made the healthiest cookie butter ever.

The bestie asked so I made her the healthiest cookie butter ever.  Have you tried the Biscoff Cookie Butter or even from the one from Trader Joes?  Gee's they are so good but so full of sugar.  I did my research and it's condensed milk that gives it that creamy texture.

I did some looking around at some healthy recipes for cookie butter, but all of them were really nut butters with spices.  None of them were made from a cookie, which is what I wanted to stick to.

Enter Simple Mills Cinnamon Cookies (this post is not sponsored.  I just love them lots).  I saw them at the store and my mind just started working overdrive.  All I needed to add was the additional spices, but then what could I add that would give it the creamy texture without using condensed milk.  The answer was dates.  Dates soaked in boiling water to soften them up.  Ding. Ding. Ding.

Oh and to make it even better I added some collagen.  I know.  You love me now.  Here is the recipe.

    Ingredients

    • 1 Box Simple Mills Cinnamon Cookies
    • 2 Scoops Collagen
    • ⅓ Cup Almond Milk
    • 1 Teaspoon Cinnamon
    • 1 Teaspoon Vanilla Powder
    • Pinch of Ground Cloves
    • Pinch of Nutmeg
    • 4 Pitted Dates that have been soaking in boiled water for 30 minutes
    • 1 Tablespoon of Almond Oil or Grape Seed Oil need a neutral oil

    Instructions

    • Place all the cookies in a food processor and pulverize until it’s all broken down into sand. Add in the collagen, cinnamon, vanilla, cloves and nutmeg. Blitz for a few seconds to mix it all. You can add more spices later if needed.
    • Next Add in the milk and let soak for a minute or two. Process again until you get a loose paste. Take out the dates from the boiling water and pat dry. Process until the dates have been fully incorporated into the cookie paste. While the processor is on drizzle the oil in slowly. You won’t need all the oil, as it’s just used to loosen the cookie butter until you get that nice spreadable consistency.
    • Now you taste your cookie butter add more cinnamon, cloves or nutmeg a pinch at a time until you get the spiciness you want.
    • Store in a jar in the refrigerator for about a week. Enjoy!

Collagen peptides, I've just started hearing talk of these but never in cooking. I thought this was apple butter at first. Going to have to try this. 😉

I put it in my jams and ice creams and even cakes. My mom just started using it 2 weeks ago and she has had dry eyes for most of her adult life and since then it has cleared up. For me it helped me grow hair back I lost from pregnancy.

I love cookie butter but it's so bad because if I get that Biscoff stuff, I'll eat the whole container in a few days! This looks like a delicious alternative. I'll be trying it this weekend!

I hate to admit this but sometimes I eat cookie butter with just a spoon right out of the jar. I can't wait to give yours a try and indulge without all that sugar.

What an amazing idea to use dates instead of condensed milk! I love it, but it gives me the worst heartburn on earth!

I can never get past not being a big fan of cinnamon. Do you think it would work without it? Or maybe less?

Wow, what a great idea to make a healthier cookie butter and I love how you use dates to replace the sugar. I bet it's delicious, I don't think it would last a week in our house!
