


Why I made the healthiest cookie butter ever.
The bestie asked so I made her the healthiest cookie butter ever. Have you tried the Biscoff Cookie Butter or even from the one from Trader Joes? Gee’s they are so good but so full of sugar. I did my research and it’s condensed milk that gives it that creamy texture.
I did some looking around at some healthy recipes for cookie butter, but all of them were really nut butters with spices. None of them were made from a cookie, which is what I wanted to stick to.
Enter Simple Mills Cinnamon Cookies (this post is not sponsored. I just love them lots). I saw them at the store and my mind just started working overdrive. All I needed to add was the additional spices, but then what could I add that would give it the creamy texture without using condensed milk. The answer was dates. Dates soaked in boiling water to soften them up. Ding. Ding. Ding.

The Healthiest Cookie Butter Ever
Place all the cookies in a food processor and pulverize until it’s all broken down into sand. Add in the collagen, cinnamon, vanilla, cloves and nutmeg. Blitz for a few seconds to mix it all. You can add more spices later if needed.
Next Add in the milk and let soak for a minute or two. Process again until you get a loose paste. Take out the dates from the boiling water and pat dry. Process until the dates have been fully incorporated into the cookie paste. While the processor is on drizzle the oil in slowly. You won’t need all the oil, as it’s just used to loosen the cookie butter until you get that nice spreadable consistency.
Now you taste your cookie butter add more cinnamon, cloves or nutmeg a pinch at a time until you get the spiciness you want.
Store in a jar in the refrigerator for about a week. Enjoy!
