    Ube French Toast Made With Just 3 Ingredients

    This Ube French Toast is made with milk bread, ube ice cream and fried in butter. So simple yet oh so good.

    I love easy. We all love easy recipes and this is one of them. I believe the origins of making French Toast with ice cream came from Jacques Pépin, not from Tik Tok.

    He talks about it on his PBS show. When he was a chef in the 1950's he had to make lots of French Toast at the hotel he was working at. Instead of making batter from scratch he just melted some eggy French Vanilla ice cream and dipped the bread in the melted ice cream and fried it in butter until it was crispy.

    Sounds easy enough right? Let's make it Filipino though and use Ube ice cream. The surprising thing is that when you fry Ube ice cream it get's a bit crispy! It's so good.

    Ingredients You Will Need

    Bag of milk bread, carton of ube milk and stick of butter.

    Japanese Milk Bread - You will need thick bread for this recipe and the best bread to use is Shokupan also known as Japanese Milk Bread. They are sliced nice and thick and holds batter really well and doesn't get soggy when soaked in the ice cream. You can get them at Japanese bakeries and grocery stores.

    Ube Ice Cream - Use the best Ube Ice cream you can find!

    Butter - The butter is just used for frying. You can use real butter or vegan butter. I think coconut oil would work too.

    How To Make Ube French Toast

    Crusts cut off a milk bread.

    This first part is optional, but it makes for a nicer presentation. Cut the milk bread crusts off the sides to make a square. Eat the crusts! They are still good and soft.

    Place ½ cup of ice cream in a bowl and melt it in the microwave for 30 seconds. Stir to melt any leftover bits.

    Soaking one side of the bread.

    Soak one side of the bread for 5 minutes. 10 minutes is great if you can wait that long!

    The flip it over and soak again for 5 to 10 minutes.

    Melting butter.

    In a small non stick pan melt 1 teaspoon of butter on low heat. I recommend using your smallest burner to make this Ube French Toast.

    Once the butter has melted lift out the bread from the melted ice cream letting any excess drip off. Place in the pan with the melted butter.

    With the heat on low cover the pancakes to cook for 5 minutes.

    Take the cover off and turn up the heat just slightly to make the butter sizzle and heat up. Cook for a further 2 minutes.

    Flipping the Ube French Toast

    Carefully flip the Ube French toast over and cook over low heat for 5 minutes. This time leave the cover off. Then turning the heat up just a little cook for a further 2 minutes. This gets the top a bit crunchy.

    Transferring to a plate.

    Transfer to a plate and cook the second piece of bread using the same method. You can soak the second piece of bread while the first one is cooking.

    How To Serve Your Ube French Toast

    It's best to eat it while it is warm. I've also had it at room temperature and it's still pretty good.

    I like to serve with some Ube Ice cream on the side with a bit of fruit.

    Some people like to take a bit of ice cream and spread it or place the whole scoop on and let it melt into the bread for additional Ube yumminess.

    Can You Freeze It?

    These Ube French Toast can be made a head and wrapped invividually when at room temperature and then transfer to the freezer to keep for up to 3 months. Don't forget to date it if you do that.

    To re-heat from frozen place on a lined baking tray and bake for 10-12 minutes until it's full heated.
