    Green Plum Clafoutis

    These Wholesome Green Plum Clafoutis is really a hybrid of a Frangipane Tart and a Clafoutis.  I wanted to make something with these beautiful green plums I got from the farmers market, but didn't want to make a crust.  I experimented and I loved how it turned out.

    This tart/clafoutis makes a nice transition into fall and you can sub any seasonal fruit you fancy.

    Wholesome Green Plum Clafoutis

    Makes 6 servings

    Ingredients

    • ½ cup Vegan Butter or Ghee softened
    • ⅓ cup Date Sugar or Coconut Sugar
    • ¾ Cup Almond Flour
    • 1 Cup Full Fat Coconut Milk
    • 2 Eggs
    • 1 Tablespoon Vanilla Powder or Extract
    • ½ Teaspoon Almond Extract
    • Pinch of Salt
    • 3 Plums or other in season fruit cut in half and sliced thinly
    • 2 Tablespoons of Coconut Milk Powder for dusting

    Instructions

    • Preheat oven to 325 degrees and spray mini tart tins with coconut oil. Set aside on a baking sheet.
    • In a large bowl whisk together the butter, sugar, almond flour, vanilla, almond extract, salt and eggs until smooth. Add in the coconut milk until incorporated.
    • To assemble place sliced plums in each tin and fill each tin with the batter. Bake for 20-25 minutes until the tart is golden and the fruit is cooked through.
    • To serve dust with coconut milk powder and some vegan vanilla ice cream. It’s also good with a drizzle of caramel.
