    Apple Crisp for Two - With A Filipino Twist!

    This Apple Crisp for two is the perfect dessert for an at home dinner with a loved one (or soon to be). It's filled with Filipino ingredients such as coco jam, calamansi juice, pinipig, and pili nuts.

    Apple Crisp For Two

    It's that time of year when having a dinner date at home is ideal. It's chilly enough for cuddles and warm desserts.

    This Apple Crisp For Two can be prepared ahead and just before you sit down for dinner, pop it in the oven and set the timer for 30 minutes. In half an hour you will have a gooey, crispy and warm apple dessert. Ahh, so romantic.

    Hidden Filipino Ingredients in Apple Crisp

    The cool thing, in my opinion about this Apple Crisp for two is that we use many Filipino ingredients in it like coco jam, calamansi juice, pinipig and pili nuts.

    This is what you will need for the filling:

    • Two Apples (I used Granny Smith)
    • Coco Jam or Minatamis na Bao serves as a replacement to caramel
    • Vanilla
    • Calamansi Juice, I like deeper flavor of calamansi instead of lemon
    • Cinnamon
    Ingredients for the Apple Filling.

    This is what you will need for the crispy topping:

    • Oatmeal
    • Flour
    • Pili Nuts - This is a super buttery nut that is native to the Philippines.
    • Pinipig - Imature sticky rice grains are pounded flat and toasted and used mainly for toppings for extra crunch.
    • Sugar
    • Cinnamon
    • Butter
    Ingredients for the Crispy Topping

    How To Make Apple Crisp For Two

    First start by prepping your apples. Peel and then take out the core. Then slice each apple into 12 somewhat thin wedges.

    Place the apples in a small bowl and add the calamansi juice. Mix well making sure all the apples are coated.

    Add in the coco jam, vanilla and cinnamon. Mix well again. Arrange the apples in a 4-5 inch mini baking dish.

    Step by Step Directions on how to make Apple Crisp for Two.

    To make the crispy topping mix together the oats, flour, pili nuts, sugar, pinipig and cinnamon. Mix well and then add that mixture into the butter. Use your hands to massage the butter into the dry ingredients until you get crumbs.

    Pile the crispy topping over the apples and bake at 350C for 30 minutes.

    How To Serve

    Once the Apple Crisp is done baking leave to rest on the counter for 10 minutes.

    Ingredients

    Apple Filling

    • 2 Apples Peeled and Cut Into 12 Wedges Each
    • 1 Tablespoon Calamansi Juice
    • 1 ½ Tablespoon Coco Jam
    • 1 Teaspoon Vanilla Extract
    • 1 Teaspoon Cinnamon

    Crispy Topping

    • 3 Tablespoons Flour
    • 3 Tablespoons Oatmeal
    • 1 Tablespoon Pinipig
    • 1 Tablespoon Pili Nuts
    • 2 Tablespoon Raw Sugar
    • 1 Tablespoon Cinnamon
    • 2 Tablespoon Butter Cubed

    Finishing Ingredients

    • 1 Scoop Vanilla or Coconut Ice Cream
    • 1 Tablespoon Coco Jam

    Instructions

    Make the Apple Filling

    • First start by prepping your apples. Peel and then take out the core. Then slice each apple into 12 somewhat thin wedges. You will have a total of 24 wedges.
      Place the apples in a small bowl and add the calamansi juice. Mix well making sure all the apples are coated.
      Add in the coco jam, vanilla and cinnamon. Mix well again. Arrange the apples in 5 inch mini baking dish.

    Make the Crispy Topping

    • Mix together the oats, flour, pili nuts, sugar, pinipig and cinnamon. Mix well and then add that mixture into the butter. Use your hands to massage the butter into the dry ingredients until you get crumbs.
      Pile the crispy topping over the apples and bake at 350C for 30 minutes.
