    This Filipino inspired cocktail is made with coconut cream and a coconut spirit called Lambanog.  It's finished with some pandan powder.

    I made these for my brother when he came over for the holidays. I spent about 30 minutes photographing it and he kept hovering asking if I was finished yet. He obviously doesn't know how life is like living with a food photographer.

     

    Filipino Inspired Cocktail

    I wanted to make a cocktail based on one of my favorite flavor combinations - pandan and coconut.

    The recipe for this cocktail is very simple.  All you need is a can of coconut cream, lots of ice and a bottle of coconut spirit.  The quick way to make it is to put it all in a blender and pour into shot glasses. Or if you prefer you can also make it with the shaken method by putting all the ingredients in a cocktail shaker instead.

    Either way both methods give you a very quick cocktail.  To finish I just dusted the edges with pandan powder and desiccated coconut.

    He finally got to try it and probably had 2 or 3 more.  It was worth the wait.

    Ingredients

    • 1 14oz Can Coconut Cream
    • 1 Cup Crushed Ice
    • ⅓ Cup Coconut Spirit or Coconut Rum
    • 1 Teaspoon Pandan Powder
    • 1 Teaspoon Desiccated Coconut

    Instructions

    • Put all ingredients in a blender blitz until smooth and pour into shot glasses. Dust with some pandan powder and desiccated coconut.
