    Longganisa Breakfast Sandwich

    This Longganisa Breakfast Sandwich is made with Ube English Muffins, longganisa patty and super fluffy scrambled eggs.

    My friend Luisa Brimble has successfully segued into becoming one of the best bakers in Sydney, Australia at a place called Tita Carinderia.

    It's a place that I really want to go to but going back to Australia is very, very expensive at the moment.

    Anyway one of the items they sell there is a Filipnio Breakfast Sandwich made with a longganisa patty and pandesal English muffins. Since I can't go I make it myself. Instead of using pandesal I used my Ube English muffins instead. It hit the spot and now I am sharing how to make it with you all.

    Ingredients

    Here is what you will need to make the most tasty Longganisa Breakfast Sandwich.

    Longganisa - For this sandwich we are going to make patties. Preferably buy the ones that are skinless so that you can easily mash it up and form into patties. If yours does come with a casing cut it in half and take it out of the casing.

    Eggs - You will need 4 eggs to make super fluffy eggs.

    Ube English Muffins - I used my Ube English Muffins, but feel free to use regular English Muffins or even extra large pandesal.

    Banana Ketchup - If you have access to Banana Ketchup I use half mixed with kewpie to make a quick sauce.

    Kewpie - Honestly they should not sell any other mayonnaise. You can easily find kewpie everywhere now.

    Hot Sauce - This is optional if you would like a bit of spice to your morning sandwich.

    How To Make a Longganisa Breakfast Sandwich

    4 portions of longganisa shaped into a ball.

    In a bowl combine 1 pound of raw longganisa. Remove from casings if it has any and mash until mixed together. Then evenly divide the longganisa into 4 portions.

    In a non-stick pan add a teaspoon of oil and turn on the stove to medium heat. Cook one side for 3 minutes and then flip and cook for a further 3 minutes. Repeat for all the patties.

    Transfer the cooked patties to a plate to rest.

    In the meantime cook your eggs. Crack them open into a bowl and whisk with a fork until frothy.

    Add 2 teaspoons of oil into a non-stick pan that has been heated up to low heat and add in the whisked eggs.

    Leave the eggs until the bottom starts to harden a bit and you see it getting cooked around the edges. Use a spatula to nudge the eggs to the middle and then angle the pan so that the uncooked eggs run into an open space in the pan. Keep repeating this process until most of the eggs are cooked.

    Once you see that the bottom of the eggs are mostly cooked take it off the heat and form them into small squares. Flip each square just to heat through any remaining uncooked eggs.

    To make the sauce its a 1:1 ratio of kewpie and banana ketchup. For 4 Longganisa Breakfast Sandwiches you will need to mix 2 tablespoons of each.

    Mix well with a whisk and add any hot sauce to your taste.

    Gather all your cooked ingredients together and make your Longganisa Breakfast Sandwich.

    Place sauce on each of the Ube English Muffns.

    Start with toasting your Ube English Muffins and smearing your sauce on both slices.

    Top with a longganisa patty.

    Top with a cooked longganisa patty.

    Top with fluffy scrambled eggs.

    Followed by a portion of the egg. Then top with the the other Ube English Muffin. At this point you can also add a slice of cheese if you wish or maybe even some atchara!

    How To Freeze Your Longganisa Breakfast Sandwich

    To freeze the sandwiches build them out and the wrap them in foil. Place in the freezer for up to 3 months. To heat up don't remove them from the foil. Just heat up your oven to 350F and place the foil wrapped Longganisa Breakfast Sandwich on a baking sheet and heat up for 15 minutes.

    • 4 Eggs
    • Pinch Of Salt
    • 4 Ube English Muffins Toasted Sub with Regular English Muffins or Pandesal
    • 2 Tablespoons Banana Ketchup
    • 2 Tablespoons Kewpie
    • 3 Teaspoons Olive Oil
