These Queso De Bola Cheese Puffs are made with fresh grated cheese mixed into choux pastry. It's easier than it sounds!
Ahh, queen of the Noche Buena table. Queso De Bola. You make get many gifts of it and are wondering what to do with it. I can help you. Not gonna lie. The cheese that I used was actually gifted to me last year.
Trust this cheese can last forever because of that red wax. It keeps the mold out! I cut mine open just to see what it looked like and it's still perfect.
I don't know if any of you have had cheese puffs at a party before, they are my favorite appetizer. Until recently I didn't know how easy they are to make. I'm going to show you how.
Ingredients
Flour - You will need 1 cup of all purpose flour.
Onion Powder - These next two are mainly for additional flavor and dimension. 1 Tablespoon of onion powder.
Garlic Powder - As well as one tablespoon of garlic powder. Make sure you use the powder not the salt. As these cheese is very salty already. You con't need more.
Pepper - A few shavings of fresh cracked pepper, probably around a tablespoon.
Butter - Use ¼ cup of butter.
Water - 1 cup of water.
Eggs - Use 3 eggs at room temperature and whisk them well together.
Queso De Bola - Finally you will need 2 cups of fresh shredded Queso de bola. It will be used both in the batter and as a topping.
How To Make Queso De Bolla Cheese Puffs
There are a few steps involved, but not too complicated.
First combine the flour, onion powder, garlic powder and pepper. Mix well.
In a separate bowl or container, whisk all the eggs together.
In a large sauce pan heat up the water and butter until boiling. Make sure the flour mixture is near the stove as once it starts boiling you will add it in.
Mix until you have a nice dough.
Transfer the cooked dough to a different bowl to cool down. Wait about 10 minutes and then add the eggs a little at a time. Add in 4 pours and mix well in between.
You may need to change from a whisk and back to a wooden spoon to get it all mixed together.
Add in the 2 cups of shredded Queso De Bola (leave about 2 tablespoons for topping). Mix well.
To bake use a 1 tablespoon ice cream scooper to portion out the Queso De Bola Cheese Puffs on to a lined baking sheet.
Top with some leftover Queso and bake in the oven at 425F for 20 minutes. Turn down the temperature to 350F and cook for a further 5 minutes to dry out slightly.
It should look puffy and golden out of the oven.
Transfer to wire rack to cool slightly.
How To Serve Queso De Bola
It's best to serve your Queso De Bola Cheese Puffs right out of the oven so that they are nice and warm and crispy.
They are filled with so much cheese and really like eating a crispy Queso De Bola.

- Ice Cream Scooper 1 tablespoon size

Instructions
- Pre-Heat oven to 425F and line 2 baking sheets with parchment paper or silicon mat.

- Heat up the water and butter in a sauce pan until boiling. Make sure the flour mixture is near the stove as once it starts boiling you will add it in. Mix until you have a nice dough while the heat is still on. Once the dough looks a bit dry take off the heat.¼ Cup Butter, 1 Cup Water
- Transfer the cooked dough to a different bowl to cool down. Wait about 10 minutes and then add the eggs a little at a time. Add in 4 pours and mix well in between. You may need to change from a whisk and back to a wooden spoon to get it all mixed together.
