I can't believe it's November already. I'm totally in denial that it's the end of the year, BUT this first week of November is oh so special because 1. It's my birthday week and 2. I get to show you guys my brand new spanking website.
The recipes are better organized, it's easier to pin my images and recipes AND I am able to share with you the previous work I have done.
To celebrate I am sharing this super easy Smoked Salmon Chive Pancake that you can make with any favorite pancake mix you use already.
It's perfect as an appetizer or even for breakfast to serve for your overnight guests during this holiday season.

Ingredients
- ½ Cup Your choice of Pancake Mix I use Simple Mills Pancake / Waffle Mix
- 1 Egg
- 1 Tablespoon Unsweetend Almond Milk
- 2 Teaspoons Olive Oil
- 2 Tablespoons Chopped Chives
- Salt and Pepper
- ¼ Cup Cream Cheese I use Kite Hill Cream Cheese
- 1 Packet Smoked Salmon
- 1 Tablespoon Capers
- 1 Tablespoon Fresh or Pickled Onions
- 1 Tablespoon Dill
- 1 Tablespoon Ghee Truffle Ghee from 4th and Heart is amazing
Instructions
- For the pancake
In a bowl mix the egg, milk, olive oil, chives and season with salt and pepper and add in the pancake mix.
Set aside and heat up a fry pan on medium heat and add the ghee to melt. If you want to make one big pancake place all the batter in the pan. If you want to make mini pancakes use a tablespoon to scoop the batter into the pan.Cook on one side until you see bubble forming and the pancake lifts up easily to flip. It should take about 3-4 minutes. Flip and cook for a further 3-4 minutes - To ServeSpread cream cheese on the pancake and top with smoked salmon. Garnish with the capers, dill and onions. enjoy!
