This Brown Butter Bibingka has a deep rich flavor from browned butter and is baked with fresh summer cherries for a bright bite.
We love anything Bibingka here and this one is no different. The butter is browned in the oven while it is pre-heating.
I think this is the part where I waffle on and on about Bibingka. Gah. It's just one of those recipes that came into my mind that had to be made. Ultra buttery with blobs of fresh cherries all over.
Really just the perfect summer cake that has been lightly dusted with powdered sugar and served with a melting scoop of coco whip.
Ingredients for Brown Butter Bibingka
Butter - You will need one stick which is 4oz and you will divide that in half. One half you will melt with the milk and the other you will stick in the oven in a cast iron skillet to brown it.
Milk - You can use regular, coconut or any plant based milk
Sugar - Any kind of sugar is good. You will use ½ cup.
Vanilla - Either paste of extract is fine.
Eggs - 3 large eggs is perfect.
Bibingka Box Mix - A White King box has 2 packets inside. You will just use one.
Fresh Cherries - That have been pitted. Use between 20-25
For equipment you will need an 8 or 9 inch cast iron skillet to bake the Brown Butter Bibingka in. You can sub just normal cake pans if you don't have one.
How to Make Brown Butter Bibingka
Here are the step by step instructions on how to make Brown Butter Bibingka.
Pour 1 cup milk of your choice into a microwave safe bowl and add in 2oz of butter. Microwave for 1 minute to melt the butter. Add 30 more seconds if it needs more heat to melt.
Once the butter is melted add ½ cup of sugar and 1 teaspoon of vanilla extract. Mix well.
Add the 3 eggs into the batter.
Whip until the eggs have been incorporated.
Add 1 packet of White King bibingka mix.
Mix well until there are no lumps. Leave to rest while the oven is heating up.
Pre-heat your oven to 450F. Take the remaining 2oz of butter and place on a cast iron skillet. Once the oven has heated up place the skillet with the butter in the oven and bake for 5-8 minutes. Checking to just bake until the butter fat is nice and golden.
Once the butter has browned pour in the Brown Butter Bibingka batter and just swirl in the butter.
Drop in your fresh cherries and return the skillet to the oven to bake for 20-25 minutes.
Once the Brown Butter Bibingka is done leave to cool fully. About one hour.
How To Serve and Store
Brown Butter Bibinkga is great served with some cold coco whip or even ice cream. Buko ice cream is a great pairing or just plain vanilla ice cream.
To store, it's best to keep it on the counter top covered in a cake dome for up to 3 days. If you still have some left over cut into individual slices and cover in foil and freeze for up to 1 month.
