    Spring Luncheon with a Friend

    A few weeks ago I had the pleasure of hosting a spring luncheon for my one of my good friends Carolina.  She was one of the people who convinced me I could start a blog and I am happy I listened!  Growing up, food was always used in celebrations and to say thank you to friends and family.  So that is what I did, I made her a quick lunch and we had fun shooting photos and playing with my daughter.  It was a wonderful afternoon.

    This was the menu I put together for our lunch.

    I had the cheese platter, drinks and salad ready before Carolina arrived.

    I had to wait for her to arrive to make the flat bread because the squash blossoms I had were already wilted.  Carolina was kind enough to offer to buy new ones so I can make the original flatbread I wanted to make.  When you buy squash blossoms use them right away!  That was a lesson learned for me.  To prep the squash blossoms cut out the stem inside and wash thoroughly.

    To make the flatbread I spread some cashew Alfredo sauce on the bread and topped it with vegan mozzarella cheese.  I then layered the squash blossoms on top and seasoned with salt and pepper.  I had them in the oven for 15 minutes.

    I served it along side a green salad and mustard vinaigrette.  The salad is very easy to put together.  It's as simple as putting all the greens you have on a plate with some avocado and peas.  For the dressing I combined one tablespoon of dijon mustard with 2 tablespoons of olive oil and one tablespoon of apple cider vinegar with half a garlic clove that had been finely diced.  I served it on the side along with some vegan sausages.

    For dessert I made it easy and served some paleo chocolate chips I baked a few days before with some matcha fudge and chai tea.

    It was such a nice afternoon that was easy to put together even with a toddler running around.  I aim to make a luncheon like this a quarterly event with different women who inspire me.  If you are around the Bay Area let me know!  I would love to have you over for lunch.
