Just before we left for our big Asia trip I hosted a few mom’s at my house for an early Super Simple Mother’s Day Spring Luncheon.  The only thing I had to make were these Smoked Salmon Chive Rolls and the rest was easy peasy.

With Mother’s Day just around the corner, some of you may want to celebrate each other as well with no significant others or children around.  Here are a few tips on how to put together something simple yet lovely for your fellow mom’s.

The Decor

Just focus on a floral center piece with one color from your local grocery store.  Choose two or three flowers and cut them the same length and arrange in a vase and place in the center of your table.  Keep it low so that you can see each other across the table.

The Food

Make it super simple on yourself by just cooking one thing that is filling.  I served these Smoked Salmon Chive Rolls with Lemon Dill Pesto with cucumbers, radishes, caper berries, boiled eggs and cream cheese.  Using mini serving boards as a plate with all the fixings change things up a bit.  It also adds a personal touch.

For dessert, just a bowl of in season local strawberries will do.

The Drink

To drink, some Elderflower soda water was served garnished with edible flowers.

For those that wanted an alcoholic alternative (Me!), I found these bottles of Rose Apple Cider.  They were perfectly sweet and crisp and rounded out our meal well.
