    Ube Ice Cream Cake Sandwich For One

    This Ube Ice Cream Cake Sandwich is made with just 3 ingredients. Ube Ice Cream, Ube Mamon and Ube Polvoron. It's a quick and easy dessert that will totally cure the munchies.

    My Dad loves eating ice cream with bread. Especially pandesal. Actually I lie, white wonder bread was his thing.

    When I moved to Singapore it was so nice to see the Uncles on the street selling ice cream sandwiched in-between fluffy bread. It's not just a Filipino thing, but an Asian thing. Haha. We take ice cream sandwiches literally, not in-between cookies, but bread.

    In this recipe we will be using fluffy Ube Mamon cake. It's great to use as the "bread" in an ice cream sandwich as even when frozen it is still nice and soft. It also absorbs melted ice cream really well.

    Initally I just wanted to coat the sides with crushed Ube Polvoron, but I ended up coating the whole thing with it. So it kinda looks like a Silvana on the outside.

    Ingredients

    You only need 3 things to make it!

    1. Ube Mamon - I get mine from Red Robin, you can get your anywhere you like. Pro tip is to freeze the Mamon first as it's a very delicate cake. It will also make it easier to slice in half.
    2. Ube Ice Cream - Tried a new brand called Mister Sorbetes. It's okay. I like Magnolia better.
    3. Ube Polvoron - Goldilocks makes the best.

    How To Make Ube Ice Cream Cake Sandwich

    As the title says it is a recipe for one. But you can buy multiple mamon and ice cream and make as many Ube Ice Cream Cake Sandwiches you want.

    Ube Mamon cut in half.

    First slice the ube mamon in half, like how you would cut an English muffin or bagel.

    Adding ice cream.

    Then top with Ube Ice Cream. I like using a spoon instead of a scooper to get thiner smaller pieces that would be easier to smush down.

    Putting a cake top on.

    Place one of the mamon pieces on top like a cover. I like to invert the top for presentation purposes as the top of a mamon bakes much darker.

    Coating with polvoron.

    Then roll the edges of the Ube Ice Cream Cake Sandwich into the crushed Ube Polvoron.

    If you want you can also cover the top and bottom with Ube Polvoron. Now it looks like a Silvana or Ube English Muffin. Ha!

    Wrapped in plastic wrap.

    I like to wrap the finished Ube Ice Cream Cake Sandwich in plastic wrap to shape it rounder and then freeze it again so that the ice cream hardens.

    How To Serve Your Ube Ice Cream Cake Sandwich

    Ha! It really looks like an Ube English Muffin.

    To serve I like to cut in half so it's easier to eat and share (if you wish).

    After cutting the Ube Mamon initially that the middle bit dips A LOT that there is hardly any cake. Anyway just be mindful of that when you make it. Still really good though.

    Ingredients

    • 1 Packet Ube Mamon (Must Be Frozen)
    • ½ Cup Ube Ice Cream
    • 1 Piece Ube Polvoron Crushed

    Instructions

    • Then roll the edges of the Ube Ice Cream Cake Sandwich into the crushed Ube Polvoron. If you want you can also cover the top and bottom with Ube Polvoron. 
    • Wrap the finished Ube Ice Cream Cake Sandwich in plastic wrap to shape it rounder and then freeze it for 15 minutes (or longer) so that the ice cream hardens.
    • To serve, unwrap and slice in half.
