    Green Mango Shake - Filipino Style

    This Filipino style Green Mango Shake is the perfect icy mix of sweet and sour. It's the kind of drink you crave on a super hot day.

    I crave this once I land in the Philippines. But I did notice on my last trip a year and a half ago - it's not so common to see Green Mango Shake. I see regular Mango Shakes but not this one for some reason. If any of you know why let me know!

    Okay so if you are one of those people that love sour gummies or any kind of sweet and sour combo this drink is for you. It's full of pure unripe mango that is pucker your lips kinda sour. Then it's mixed with sweet water and lots and lots of ice to get that key slushy consistency. It feels like the ice does not melt when you do it Filipino style like this. All fruit and ice. Perfection.

    Ingredients

    Green Mango - I don't live in the Philippines so it's super rare for me to see green mango. When I do see it, the darn things are oh so expensive!!!! It's a treat for sure. Cut it into super small squares so that it's easier for your blender. Green mangoes are much harder than ripe ones.

    Water - We are not just going to use any kind of water. It's going to be boiled with sugar so that it reduces to make a syrup. Basically it's key so that it helps the fibers of the green mango stay suspended within the drink or else it will separate with the fruit on the top and juice on the bottom.

    Sugar - The sugar content is a bit high here to make the sugar syrup water. Also you need more to counter the sweetness.

    Crushed Ice - 2 cups crushed ice. I recommend using crushed so that it's easier to blend.

    How To Make Your Filipino Green Mango Shake

    Making the sugar syrup water is a bit extra, but so worth it.

    Water and sugar in a saucepan.

    Combine 2 tablespoons of sugar and 1 cup of water in a small saucepan.

    Bring to a boil on high heat and then turn it down and leave to simmer for 15 minutes. The water should be a touch tinted brown and slightly reduced. Put in the freezer for 15 minutes to cool down. Or you can make it the day before and put it in the fridge until you need it.

    So I bought a big ass green mango from Ranch 99 or is it 99 Ranch??? Anyway I just used 1 face of it and it came to exactly 1 cup of diced green mango.

    Put the 1 cup of green mango, 1 cup(ish) water syrup and 2 cups of ice in the blender.

    Just blended green mango shake.

    Blend on high until your Filipino Green Mango Shake is fully combined and mixed and blended.

    How To Serve Your Green Mango Shake

    To serve pour in a 12oz glass and drink right away.

    So I didn't finish mine and had to put it in the refrigerator. Surprisingly it was still slushy an hour later. I don't recommend you do that, but just wanted to let you know that it's still okay.

    Preferably please finish it right away.

    Equipment

    • Sauce Pan
    • Blender
    • 12 oz glass

    Ingredients

    • 1 Cup Water
    • 2 Tablespoons Sugar
    • 1 Cup Fresh Diced Green Mango
    • 2 Cups Crushed Ice

    Instructions

    • First let's make the sugar water syrup. This need to be cooled down for at least 15 minutes in the freezer or made a few hours or days ahead and cooled in the refrigerator .
    • Combine 2 tablespoons of sugar and 1 cup of water in a small saucepan. Bring to a boil on high heat and then turn it down and leave to simmer for 15 minutes. The water should be a touch tinted brown and reduced slightly. So it will be a little less than a cup now.
    • Dice 1 cup of green mango.
    • Put the 1 cup of green mango, 1 cup(ish) water syrup and 2 cups of ice in the blender. Blend until smooth .
    • Pour in glass and drink right away.

    Notes

    Does it really have to be a green mango?  I know it's really hard to get so you can get away with a regular mango that is not ripe yet.  Just feel it to make sure your mango is super firm.  That is usually a sign that it's still sour. So you can use that instead of hunting around for green mango.
