Who loves a Golden Milk Latte? I do, so much so that I decided to turn them into protein bars. I'm obsessed with creating my own bars as some of the ones that you buy have the longest list of ingredients and it adds up especially the sugar.
This recipe requires no baking and is completely vegan. All you need is a good food processor.
Ingredients
Filling
- 1 Cup Oats
- 2 Tablespoons vegan protein powder of your choice I suggest plain or vanilla flavored
- 1 Teaspoon Tummeric
- ¼ Teaspoon Ground Ginger
- ¼ Teaspoon Cinnamon
- ¼ Cup Hemp Seeds
- 1 Teaspoon Vanilla Powder extract will do as well
- ¼ Teaspoon Almond Extract
- 3 Dates Pitted
- ¼ Cup Coconut Milk
Topping
- ¼ Cup Melted Coconut Butter
- 1 Teaspoon Maple Syrup
- ¼ Teaspoon Vanilla Extract
- 1 Tablespoon Coconut Chips
- 1 Tablespoon Dried Flowers Optional or use Natural Colored Sprinkles
Instructions
- Place all filling ingredients in a food processor and blend until smooth. If the batter looks a little too wet add in some more protein powder a teaspoon at a time. Let sit for 5 minutes for the liquid to absorb. In the mean time line a loaf tin and spread the mixture out. It will be pretty thin, but that’s okay because you will only be eating small squares of this at a time.
- Place in the freezer to harden while you make the coating. At least 30 minutes.
- For the topping mix in the melted coconut butter, maple syrup, vanilla extract in a bowl and mix well. Take the loaf pan out of the freezer and pour the coconut butter mixture on the top and spread it out to make sure the whole bar is covered. While the coconut butter is still melted sprinkle around the coconut chips and dried flowers. Put back in the freezer to set. At least another 30 minutes. Once the coconut butter has hardened slice into bars.
