Super Easy Paleo Granola
Everyone! Did you guys know that paleo granola is super super easy to make? I mean, any kind of granola is super easy to make if you think about it. I used to buy expensive bags of paleo granola and now my life has changed by making my own with some walnut oil and date syrup.
Walnut Oil From La Tourangelle
I used La Tourangelle Walnut Oil that is made here in Woodland California. I recently met the team and love how small the company is and how truly family oriented they are. It's not that often you can talk to a CEO about potty training.
The CEO Matthieu Kohlmeyer is from France and I told him I used French Macarons as my daugthers reward treat and even he thinks I'm too fancy. IT'S NOT NORMAL IN FRANCE EITHER!
Anyway back to this paleo granola. The walnut oil just intensifies the flavor of all the nuts, not just the walnuts and the date syrup adds the right amount of sweetness.
Why Just Date Syrup
Now let's talk about date syrup. You have seen me use it in about 80% of my recipes recently. About a year ago my dad was diagnosed with diabetes. He is a sweets lover (which is how he got in trouble in the first place). I was on a quest to give him all the treats modified with less sugar and made with something his body can handle.
One day I was on Instagram (go figure) and saw some local Bay Area foodies talking about a brand called Just Date Syrup. I commented on one of their posts and the owner Sylvie wanted to send me one to try and I said yes! It came two days later and I've been hooked ever since. Now I regulary buy the set of 3 so I can keep two here for recipe development and give one to my parents in Las Vegas.
I only added a touch of the date syrup to the granola so that you can adjust the sweetness when your eating the granola. It is really good in ice cold dairy free yogurt and some crunchy fruit.
Ingredients
- ¼ Cup Walnut Oil
- ¼ Cup Date Syrup
- 2 Tablespoons Almond Butter
- 2 Teaspoons Vanilla Paste
- 1 Teaspoon Cinnamon
- 1 Teaspoon Cardamom
- ¼ Teaspoon Pink Himalayan Salt
- 2 ½ Cup Mixed Nuts
- ½ Cup Hemp Seeds
- 4 Pieces Chopped Dates
Instructions
- Pre-Heat Oven to 300 Degrees F and line a large baking sheet with parchment paper.
- Place all the ingredients in a bowl and mix well.
- Pour on to the lined pan and spread to make an even layer.
- Bake for 25 minutes until the nuts are golden brown.
- Remove from the oven and allow the paleo granola to fully cool down.
- Break into chunks and store in an airtight container up to 3 weeks.

I love this granola. I love combinations of nuts like this rather than the granolas that are loaded with oats and other grains. I also really love that you sweetened it with date syrup. We have diabetics in our house, too, and finding things they can snack on is often a challenge.
