This Filipino Style Sloppy Joe is made with Ube English Muffins, Longganisa Crumbles and a mango tomato salad with Bagoong. It’s the best breakfast or any sandwich in all of the world!
Have you ever had food dreams? For me it was this sandwich. Originally it was supposed to be a sausage patty, kinda like a McSaussage. But I lost the energy to fry sausage patties. I did one and I said oh forget that. So I threw in all the patties I formed into the skillet and just cooked it all. When I put it all together, I didn’t really know what to call it and then I remembered the Sloppy Joe. The most lazy sandwich my school cafeteria made. BUT this one is so much better. Let me tell you why.
You see it’s Filipino Style. The crumbles is flavored with Longganisa. Yes I have made this before, but I love having different ways to use my recipes. I think this might be the best variation.
Then I made a salad with mango, tomato and bagoong with a touch of hot vinegar. Yes you know where this is going. Now we get the salty, sea mixed with some sweet mango and juicy tomatoes.
Then I top it off with a crispy fried egg. I tell you this sandwich is a dream.
The bread that binds it all together is an Ube English Muffin. Yes I said ube. I repurposed my Ube Hot Cross Buns recipe and instead of baking it into rolls, I fried them in a skillet.
Can you use regular English Muffins for this Recipe? Why yes you can. You can even use hamburger buns or any favorite bread you have around.
Start by slicing the English Muffins in half and toast them. Then I slathered the bottom of the Ube English Muffin with mayo mixed with garlic.
Followed by the Longganisa crumbles.
Next the the mango tomato salad goes on.
For a touch of bitterness I added some fresh watercress leaves.
Finally I added the egg and the top of the Ube English Muffin.
Do you see all the colors and the textures and how crispy, juicy and creamy it all looks. When you break the egg and it mixes with the bagoong it almost has this cheese umami flavor. My goodness. I dream about it even after I eat it. It’s so darn good. Yes it is a labor of love to make this. But really at the rate this COVID thing is going we are going to end up back at home for awhile longer. (Oh please no!!)
So put it on the next quarantine cooking list. Go on. Make it. You know you want it in yo belly.

Ginataang Zucchini with Chicken Recipe
Mix all the dry ingredients in a bowl and then add in the water and oil.
Mix with a dough hook until you get shaggy looking dough. Then mix on low for 10 minutes until it starts to pull away from the bowl.
Oil a bowl and shape the dough into a ball and leave to rise in a warm area for and hour or two depending on how hot or cold your house is.
Place the flax meal in a bowl. Oil two baking sheets.
Punch the dough down and take out of the bowl and transfer to a bench. Kneed for about 2 minutes until nice and soft and cut into 8 equal peices.
Roll each piece into a ball and then flatten it. Roll the dough in the flax meal and place on one of the oiled baking sheets. Repeat for the rest of the dough keeping 4 pieces per sheet to alow for growth.
Oil two pieces of saran wrap big enough to cover each of the baking sheets. Leave to proof for 1 hour.
Heat up a cast iron skillet on medium low heat. Once hot add in the butter and one of the english muffins. Cook each side for 4 minutes. Keep an eye on the heat so that you don't burn the bread. If it gets to hot turn down the heat and cook longer. Repeat for each of the english muffins. Set Aside or go buy some. The muffins can be made up to 3 days ahead.

Put the mango, tomato, bagoong and chives in a bowl. Mix well and season with the vinegar adding more if needed.
Mix the garlic and mayonaise in a bowl. Side aside.
Heat up a fry pan to medium-high heat. Once the pan is hot drizzle in the oilve oil and crack and egg in. Cook for 2-3 minutes until the edges get brown, but the yolk is still runny. Season with salt and pepper.
Toast and slice an Ube English Muffin and then spread the garlic mayonaise on the bottom slice.
Top with the longganisa crumbles, mango tomato salad, watercress and fried egg. Add the top of the english muffin and eat up!
