I didn't know that I would have a series of Taho recipes, but here we are and making a little update to the beloved Ube Taho.

I am not a fan of using lots of Ube flavoring so instead in this recipe we will be using melted Ube Ice cream. Yes! I said what I said. The ice cream makes it more creamy and I think more flavorful and depending on which ice cream brand you use, you might even get bits of real ube in there.

    and there's more..

    What You Will Need

Instant Boba - Please get the good ones from Taiwan. The ones from the freezer section are the best kids and have really good bounce.

Ube Ice Cream - Make your own or use store bought. Just make sure it's from a Filipino Brand. Support your people!!!

Dessert Tofu - The key is making sure you get dessert tofu. The texture is lighter than even using silky soft tofu. You can find this at H-Mart, 99 Ranch and other Asian markets in the dairy section. It won't be in the tofu section.

Soy Milk - This is optional, but I like the additional soy milk.

Pint of ube ice cream, bowl of dessert tofu, instant boba on a plate, bottle of soy milk.

    How To Make Ube Taho

Melted ube ice cream in a bowl.

Melt 2 tablespoons of Ube ice cream. Be as generous as you want with the size.

Boba on the bottom of a glass.

Then prepare the instant boba according to package directions. Place a scoop in the bottom of the glass.

Boba, melted ube ice cream and dessert tofu layered in a glass.

Then layer with some melted ube ice cream and dessert tofu.

    Pouring in soy milk.

Top the layer with a bit of soy milk.

    Adding more layer.

Then add more boba and melted ube ice cream.

Completed Ube Taho in a glass.

Keep layering until you get to the top of your glass. Finish with more boba and melted ube ice cream if you wish.

    Can You PreMake Ube Taho?

I would recommend not to do that. All the steps are pretty easy and low effort. Please make and eat your Ube Taho right away.
