    5 Ingredient Paleo Jam Bars with Mangosteen Jam

    These Paleo Jam Bars are made with almond flour, coconut sugar and almond butter.  Oh and they are also vegan and made with Mangosteen Jam from the Philippines.

    Paleo Jam Bars and New Store Alert!

    It's taking me awhile to get back into the groove of making and thinking of new recipes.  But fear not I am back and I actually found a new online store I wanted to share with you all.  Totally not sponsored.  They are Filipino owned AND they ship super awesome and nutritious food and ingredients directly from the Philippines.

    The store is called Chibundles and they ship from New York.  It's my new great find as they ship foods you don't normally see in other Filipino grocery stores. As you can tell from the name they sell bundles.  They curate new boxes all the time with different foods.

    The first thing I tried from my curated bundle box is Mangosteen Jam.

     What is Mangosteen?

    It's a tropical fruit that has super thick purple shell with a green cap.  Inside it holds the most lush and intriguing inner flesh.  All white it's juicy and sweet and sour at the same time.  I can't compare it to any fruit here in the US.  It's unique.  You can find it fresh here, but it's super expensive.  $20.00 a pound kind of expensive.  So I just hunt for mangosteen when I am back in Asia.

    BUT, in my Chibundle it was in a jam from Kablon Farms!

    I had to make something that would make the jam shine.

    How to Make Paleo Jam Bars with Just 5 Ingredients

    These jam bars are so easy to make.  All you need are these ingredients.

    • 2 ⅔ Cup Almond Flour
    • ½ Cup Coconut Sugar
    • 1 Teaspoon Salt (not counting this as an ingredient BTW)
    • ¼ Cup Almond Butter
    • ½ Cup Melted Vegan Butter or Coconut Oil
    • 1 Cup Mangosteen Jam or Any Jam

    First mix together the flour, sugar and salt.  Then add in the almond butter and vegan butter.  Pour it into the dry flour mixture and mix well.  Reserve ½ a cup of the mixture to use a crumble on the top of the bar.

    Spray and line an 8x8 square pan and press in the mixture.  Use your hands to really press it down and make sure it is super packed in.

    Bake in the oven for 15 minutes at 350 degrees.  Take it out of the oven and be careful it's hot!  Spread out the jam over the top and then crumble the remaining mixture over the jam.  Bake for a further 10 minutes.  Take out of the oven and leave to cool fully before cutting into squares or bars.

    Ingredients
